No mate, you're really over thinking this. The other side really does mean the other side of the road. That is the joke, the answer is so mundane that it makes it funny.

It's not about "the other side" as in an afterlife. It means exactly what it says. The chicken crossed the road to get to the other side [of the road.] It's such a popular joke because it uses such a common question-set up for a joke, and you expect the punchline to be something clever, but instead you're just given a normal answer. The whole "chicken dies" thing isn't funny.

This is, as far as I know, the real meaning. I recall reading an in-depth article about it once. It's one of the earliest popular American examples of an un-joke.

Cars didn't exist in the mid nineteenth century, so a chicken would not be run over that easy.

You're assuming the chicken doesn't look both ways before crossing. It's not like the chicken will be crossing a busy road anyway.

Apologies if this has already been pointed out, but if the chicken dies in the middle of the road, it wouldn't actually be crossing it would it? You would have to change it to "Why did the chicken attempt to cross the road?"
