I've played most styles. Fully perked sneak 'n' snipe archery is great fun, but is fairly slow. Sneak 'n' stab one-handed is very tense, because you have very little room to fall back if detected. Illusion is awesomely powerful and, when it works, a real blast; I like to mix in Runes and Necromancy to soften up the enemy. Atromancy is actually pretty boring because your power is so great, but if you don't want to be in Sneak all the time it's a viable alternative.
From what I've seen, melee builds are very equipment-dependent, which means Smithing and probably Enchanting. My personal experience is that non-Sneak characters are very susceptible to dying to specific magic attacks, but none of my melee characters is very high, so this problem may dissipate.
I also have trouble with Destruction mage. Battlemage is okay because you have something to fall back on if your magicka fizzles, but until you are game-breakingly powerful it seems difficult to support mage armor and nukes from a single magicka pool.
