I've done everything now what?

I've killed Alduin
I'm the head of the Thieves Guild
I'm the Listener for the Dark Brotherhood
I’m the Harbinger of the Companions
I’ve helped the Stormcloaks take power
I’m the Arch Mage of the Collage of Winterhold
I found 58 of the 60 shouts
I’m a Thane in every hold
I have five houses
I have 13 of the fifteen Dadric Artifacts
I have all ten masks

So what’s left for me to do is it just rinse and repeat?

Theoretically I’m more powerful than the Jarl of Windhelm so why cant I be the Highking?

If you've only found 13 of 15 daedric artifacts, then you have, by definition, not done everything.

Do everything again with a different character type. Or, I don't know, ROLEPLAY in this RPG.

Drop everything and explore. Leave all your wealth at home, just take your weapon, armor and some potions and go out and see what you haven't found yet.

Other than that, there should be some good mods coming out in the next few months if you're on PC.

Collect the Barenziah stones.
Collect 20 Jazbay graqes.
Collect every bug-in-jars (or something like that, I don't know much about this)
Look for sidequests.

There's at least one of these a day, typical responses include :

1. Create a different character, with different skills/spells.

2. Explore all of the dungeons 130 + in total

3. There are 25 or so side quests, some with unique rewards, most with unique narratives.

4. When you create a different character, see what its like from the Imperial side of the fence.

5. Go have fun, create chaos or roleplay.

Off the top of my head it sounds like you have been playing Skyrim wayyyyyy to much since it was released.
Heck, I have't done half the achievements you have and I have been playing way too much.

Heck, I have't done half the achievements you have and I have been playing way too much.

I didnt think I was playing that much I just play about an 1 1/2 a day and maybe 6 on the weekends

As others said,

either make a different character type now and redo these quests while taking other paths if possible.

Or

make a different character type in ~six months once DLCs / expansions / mods are out to provide fresh content.
