I like the melee kill moves, since they're basically short, choreographed "cool moves" that the control scheme doesn't give you any way to perform directly.
I have mixed feelings about the ranged (bow/magic) kill cams. They aren't special moves or anything like that, just a third-person view at an odd angle showing your normal attack in slow motion, tracking the projectile as it goes. They don't really add anything new to enjoy (especially if, as an archer, you have the Steady Hand perk, so you're already watching your arrows in slow motion any time you use the bow zoom) and, as mentioned above, they can be disorienting if you have additional targets in the area or if you're already preparing another shot at the same target because you didn't expect that shot to be a kill.
Earlier tonight, I also discovered that time continues running normally during the cam shot - I zoomed in on a bandit at a good distance and popped off a quick shot at him and got a kill cam. After watching my arrow fly over there, I snapped back into first-person... and discovered that I had no stamina left. If the bow zoom had ended when I released the arrow (and the right mouse button), the shot would have taken up maybe 10% of my stamina; instead, I was apparently charged the stamina cost for the full duration of the slow motion sequence and left with nothing. (Fortunately, it didn't actually matter because the fight was then over, but it was still rather annoying.)
But, despite all that, I still kind of like them, purely because it's something out of the ordinary when one comes up. Given the option to turn off only ranged kill cams, while keeping the melee kill moves active, I'm not sure whether I would do it or not.
