A Good Assassin?

Yep, something along those lines would do nicely. Or they could be an assassin sent there on some errand, and go rogue.

blocking out the sun temporary would be valuable for an assassin

You can do that with Auriel's Bow.

Yes, I know. But, that's why my guy wants to help Harkon block out the sun. He is merely using Harkon to further his cause and becoming a vampire is merely a sacrifice he has to make. As for feeding, he doesn't kill anyone so it isn't too evil. The Dawnguard also persecute an entire race, some of which are genuinely cursed and hate their affliction, merely based on the action's of a few utterly insane vampires. They're hardly perfect!

I'm going to follow this roleplay strictly and even keep a small log on my phone to keep track of everything I've done and why I've done it. Don't want to complete a quest which contradicts earlier actions of my character. I always restart the game and getting into a character's story might finally cure my restartitis!

The Bretons come from horizontal interplay between the men of High Rock and the Altmer Direnni clan. They live in High Rock, on the northwestern border of Skyrim, and are generally considered to be one of the most civilised of the races. The Thalmor would probably regard them as mongrels, and treat them accordingly.

I think they follow a slight variation of the Nine Divines, incorporating beings such s Magnus.

Also, how old should my character be roleplay wise?
I would say 25-30 if he, in RP, becomes intected in Skyrims timeline. If not then older.

Bretons don't live very long - about sixty-seventy years. Other than that it's all up to you. Ezio Auditorre of Assassin's Creed fame is as badass at fifty as he was at thirty.

I'll probably play him young, at around 22 max. Now, I just cannot think of an idea as to why he might be an assassin.

So I guess you take Ezio Auditore, give him the power of illusion magic, rename him, turn him into a vampire, and done!

The vampires seem pretty evil to me... Killing civilians in the street to send a message and such. My current Dead is Dead character is a good assassin. It is pretty fun. You could still be a vampire, but joining the Volkihar Vampire clan would be pretty evil.

sneak characters are OP

They are, but it's a poor assassin that can't one-shot most enemies. Play on whichever difficulty you play at now, but with less armour, so if you're seen you are royally screwed bar some fancy footwork.

Roughly, but I need to make it work in the Skyrim lore. I also want a more reckless character though. So, whilst he is good, he would happily kill innocents to reach his final goal. Few for the many, if you get me?

At first, I would play at a lower difficulty. Sneak characters are really bad in the beginning, but become way overpowered later. As you start unlocking Sneak Bonuses, I would start upping the difficulty.

I don't know. It's not something I generally think about, to be honest. In Assassin's Creed, it was because of Ezio's parents being killed or being born into it. Might use that. Also, High Rock borders with Skyrim? Which hold is nearest to High Rock, as I'll make that my guy's home.

Well, I usually play on the lower difficulties anyway. I'm not great at video games and, personally, Skyrim wasn't about being challenged with combat but rather immersing myself within the world and truly creating a personal character - something so far no other game has really offered me.

Well, as I said, he is a good guy but is willing to bad things as a means to an end. The ability to control the sun is powerful for an assassin, so he merely uses Harkon as a means to achieve this power. Plus, you are not the one killing the innocents - it is the other vampires.
