Baldur's Gate I and II

Those are a must have.

So are the Icewind Dale series, Fallout 1 & 2, Vampire Bloodlines, Diablo 1 & 2 and the Kotor games.

Planescape Torment. No RPG collection is complete without it.

Both System Shock games are excellent, though getting the first one to run is tricky.

And if you have Dungeon Siege, check out the fantastic 3rd party total conversion mod http://www.u5lazarus.com/

Depends on what you mean with online. Do you mean you don't want to order a retail copy online, or just not a digital version? I'm going to mention both anyway. :P

There's a Baldur's Gate 4-in-1 boxset around, with both games and their expansions. I don't know where you live but I'm pretty sure you can buy it from on amazon.com and amazon.co.uk. For a pure digital and DRM-free version there's http://www.gog.com/en/gamecard/baldurs_gate_the_original_saga.

Same goes for the original Deus Ex, which is also on Amazon and other sites. Only it's not on GOG. But it's on http://store.steampowered.com/app/6910, currently with a nice discount.

It'll be difficult to find old games in retail stores.

Neverwinter Nights, if you plan on playing on a custom server. Single player is meh, but some custom servers are better than any MMORPG out there.

Might and Magic I - IX

Definitely recommend. Good if played simultaneously with Heroes of Might and Magic 1-3.
My favorites are VI and VII.
