VTM:Bloodlines was extremely immersive, at least the first time I played it (less so on a recent replay). Nothing like being on the Santa Monica beach at night with the boombox playing "Smaller God".
Omikron had immersive times also.
Stalker: Shadow of Chernobyl, definitely; going to the bar and hearing the jazz flute music playing, which was incongruous but beautiful.
Homeworld. You found yourself caring whether the survivors make it back to the homeworld.
