Things That Weren't in Skyrim

Most of the things you've said has a big reason to why it isn't or a lack of in the game. Usually because its regional to the previous games like Imps are only in Cyrodil and giants in Skyrim. There's a lack of Daedra due to the fact they are being hunted and summoning banned so there's less of them.

As for stuff like spears and acrobatics, they're not in it as it was probably difficult to implement into the game, and being able to jump over towns in the previous games was a bit silly.

And I find that the "R" in RPG comes from providing features that enhance the gameplay experience, rather than just piling a bunch of features on top of one another for funsies.

Any feature can enhance someone's gameplay experience provided that it works as intended, and is well implemented. Just because it's not something that you personally chose to use or enjoy doesn't mean that it's extraneous.

To add to that: If no one used medium armor, spears, or crossbows, it's because Bethesda didn't give us enough medium armor, spears or crossbows to make them attractive to use over the much more common, better quality longblade items.
