I think the OP was talking about the residents of Skyrim, not you the player.

They'll do what any communities anywhere else would have done during that time period - (or the one it's anologous to) - many of them would have led extremely harsh lives of grinding poverty punctuated by bouts of disease and fighting. Entertainment would have been limited to dancing, singing, storytelling, and drinking - though bear in mind that beer was drunk pretty much by everyone because you were less likely to die if you drank it than you were if you drank the water.
You would have itinerant storytellers and musicians - (bards), and yes "hedge wizards" selling potions and doing conjuring tricks. Games would have been simple and probably would have involved hoops and tag and that kind of thing.
If you were rich you would have had more leisure time so hunting, falconry, and that sort of thing would have been popular pastimes.
Life would have been a lot more serious because it was A Lot More Serious, certainly more so than early 21st century America or Western Europe.
