I think the real trick is to go a warrior style that uses a more 'practical' mentality. She uses Alteration's (at first novice, then moved on to the aprentice) flesh spells, as well as a shield to help compensate for the light armor. Also to get Alteration's magic resistance perks. The 'Healing' spell is used after a tough fight, where the natural regeneration heal wounds quickly enough. She doesn't consider herself a spellsword, because she uses what little magic she knows in a support role, instead of an offensive role.
For most fights, she will start by casting Stoneflesh, then swap to Spellbreaker. She may even use Ice Form Shout to buy time for casting Stoneflesh. Next, charge in and shield bash them, then slash with her sword (power attacks if they are a higher level enemy). Blocking and bashing when needed. After the fight, heal or regen any lost health and let magicka regen. Lately though, Restoration has been getting rather neglected, due to the high block skill, high armor skill, Legendary Dragonscale set, Flawless Spellbreaker, and Legendary Daedric Sword. They die before doing any real damage. I should probably start falling off more cliffs, but then I'll likely fall off a cliff that is just a little too high and die.
Just that one fight, she uses up to 5 skills. My guess is that your fights only used up to 3, assuming that you don't switch from 1H to 2H in the middle of it.

Honestly, I can't figure how to finish that sentence. 'Tedious' and 'Time-consuming' would probably fit, but those seem more for something being discribed with more annoyance than I actually feel.
One final note, lower level skills give lower boosts to level progress. Old dog, new tricks I guess.
