I had a hard time with them once... when I had a pure mage and fought them too early... and the REAPER, omg that thing was hard. Ran into them again around level 40 and thought, "what was wrong with me, these things are so easy to kill!"
They have a lot of health if fighting them at low levels, but once you have high damage output they are a breeze.
If you are playing on novice your likely problem is that most enemies die in a couple hits, so your offensive attacks are not leveling as fast as your support skills. Now you are fighting an enemy with a lot of health and don't have the damage output to kill it fast enough. What level is your primary offensive skill(destruction, one hand, two hand, archery, etc.)?
By level 30 it should be in the 75-100 range easily.
P.S. The enemy 'types' level with you. Individual enemies do not. A chaurus is a chaurus no matter your level. At higher levels you will run into Chaurus reapers which are harder, but there is no chaurus harder than a reaper and reapers do not level with you. Same goes for a bandit, bandit outlaw.......... bandit marauder. Dragons......... ancient dragons. Whether you are level 1 or level 72 a basic 'dragon' will always be the same, and an ancient dragon will always be the same. Which means at level 72 a basic dragon dies VERY VERY fast.
The exception to this would be the random enemies who are simply called 'argonian, dunmer, imperial, etc.' enemies that you meet in the wild who attack on sight... and probably thieves.
