One final little question though, does the make of the GPU matter? For example Asus, eVGA, Sapphire or XFX etc. Or is the difference in these makes purely appearance based?

I have heard better things from people about certain brands than others. But in general I think most of the brands out there are pretty solid and have been around for quite a long time. My first GPU was an x700 made by Diamond(my liquid cooling spilled on this video card while running and somehow still worked after I dried it out), then I got an Nvidia 8800GT EVGA, then an XFX Radeon HD 4870, and now I own a radeon HD 6950 made by MSI. All of my GPU's worked great. One thing you might want to consider is the physical size of the card. Certain cards are extremely long beasts. the 6950 is massive, but you can find makes of it that are a little more compact. The reference 6950's are the really large ones. So just make sure whatever model you choose can fit in your case! I literally had to hammer my case and smash my card in there lol. If you end up with a 560, they aren't as large as far as i know so won't have as much of an issue, but they aren't as fast either.
