Not quite sure. This will only be my second full game (school grabbed me in the middle of the... renaissance themed one?). But in the least those sorts of details will not greatly influence a new player, so don't worry about it.

I'm pretty sure 23 players is average. IIRC the highest player count I've played with was 30.

Pretty much. Some games get around around 30-35 at certain parts of the year, but most of the time you're looking at around mid-twenties.
