I suppose I'm the only one who finds the whole concept of "Skyrim FORCES me to do this, so my solution to the problem is proposing that Skyrim FORCES me to do that" completely laughable?
I guess you're right. In the end, however, I would rather the Thieves' Guild at least highly encourage me to steal and not kill. The way it currently is, it feels like the Dark Brotherhood more than anything, which is disappointing. I think that at least there should be some sort of in-game penalty if you decide to kill everyone and not sneak. In Oblivion, at the end of the questline you truly felt like a master thief, because in order to complete the questline to HAD to be able to sneak and steal. It might be fun in Skyrim, but it's not really the Thieves' Guild. And that's my problem with it. Of course, I think that more options are good all the time, and I think that the game should encourage more challenge rather than saying, "Yeah, I GUESS you can sneak past every mob if you really want to, but you might as well just kill everyone, we don't care."
