I'll list bugs that I don't believe have been mentioned (in context sometimes).
Right, I've had dozens of enemies (when I was always with a companion (Boone, Lily) I think) with no health bar and yet they had health.
I've had 3 freezes, the most memorable being in Novac just after recruiting Boone. I exited the Dino Gift Shop and the screen went black and the game froze (this corrupted my Autosave file).
Whilst the Player Character arms raising up has been mentioned, they also disappear on mine (rarely, but often enough to remember).
Once, just after exiting the Dino Toy Shop (Novac) again, I pressed B to view my Pip Boy and the screen was whited out. I resolved it by simply turning my Pip Boy light on then off again (and no, it wasn't on in the first place).
After playing for 5 - 8 hours straight (clocked over 40 hours since Friday) the framerate starts to stagger and the loading times end up being up to 3 times longer (no joke, 90 solid, real seconds for a few). These issues always result in a crash/freeze later on. Best to resolve by simply turning the game off for 15 minutes.
I purchased some cards from a travelling merchant (in Novac again. What can I say? I'm a hoarder. =P) and it's insta-froze my game. Can't remember which cards they were though.
I've fallen through a cliffside and got stuck inside a rock (near the stone tablet/sign for Red Rock Canyon).
I've had plenty of other glitches/bugs, but these are the ones I haven't seen mentioned in the first post.

Added the cliffside bug as just a general glitch cause there's quite a few areas along mountainsides where this can happen. Also added the extended play slowing the game/loading times. Pip-boy light problem too.
There's tearing. It's most noticeable in the opening movie where Benny shoots you. I'm using an HDTV with HDMI on the new Slim 360.
Tearing is not ideal. At all.
This has to do with the Xbox's hardware not being able to process everything but if they had taken more time on it they definately could of made it smoother.

That happens to me too, but I assumed it was because the NPC had no more money to bet, and I was just being allowed to wage more than the NPC. Of course, now that I think about it, it does seem a little buggy. If that's the case, I should have an option to remove some of what I've bet to match, but I can't...
If you watch closely their bet does increase a little, usually like 20-50 caps but there's a hard % of their money they wont go past so I agree it needs changed, but im not entirely sure its a bug.
