Is it just me, or is the concept of a Soul Gem gruesome?

Yeah. They're a business. Businesses tend to care about money. Their lousy customer service is evidence of that though, not the ~gruesome~ nature of the darker sides of magic and the effects it may have on kids who shouldn't even be playing this game anyway.
But you must admit there are a lot of illuminati Symbology as well(Mages college, Thieves guild logo, Wolf queen altar (Wolfskull cave), Black sac ritual etc.) Is this all just all just innocent harmless game content?

It is innocent because the Illuminati do not exist. They once existed, but not anymore. It is harmless because it cannot harm you.

And that's irrelevant because it's made clear that people under 18 shouldn't play this game, so if it scars them for life...only the parents are to blame.

Yeah. They chose that date to attract sales because it's flashy. Just taking a look at the bug forums and the patch thread show that Bethesda would rather have had sales brought in by shock value rather than releasing a functional product. But...that's another topic.

Oh dear, who let the guy in the tinfoil hat in? Besides, we all know the developers of TES are all occultists who sacrifice a few virgins before every release of a new game to guarantee success. And they obviously have ties to the Illumnati, the Free Masons and the Church of Anton LaVey. All the demons in the game are modelled from actual demons that they conjure up in their basemant. Sigh, I love those evil bastards. Wish I could get a job there. :devil:

Anyway, using soulgems is not as bad as it sounds. Yes you do trap something or someone's soul in a crystal. However, when you enchant or recharge an item you are actually freeing the trapped soul and the energy that is generated by freeing the soul is what is used in the enchantment, not the soul itself. Well, that's what I tell myself anyway. :D

Perhaps their spirit haunts the item because of them being used in this manner? That is the other interesting question. In most earth cultures there is a clear distinction between spirit and soul with spirit usually being tied to awareness and soul tied to some form of afterlife. Does this translate into the TES universe? And if so, what then becomes of the spirit while the soul is trapped?

It's all a matter of morality.

Sometimes it is. but without getting into a philosophical debate about it (have had many of those!), there is no morality attached to the act of killing - the moral question enters into the fray when we start talking about intent and of course, context is paramount.

The thing is that many people tend to think in absolutes, X is wrong / X is right', when we don't exist in a world of absolutes - almost everything falls into gray areas. Perhaps this applies to the world of ES as well.

Personally, I think it captures their energy. If it's a human/Mer/beast (or possibly an important creature) the soul itself could be bound to/owned by a Daedra Lord. Unlike the original owner, I don't think a Daedra Lord would like you capturing a soul that is meant to be theirs.
