As I keep saying, the problem here is that COUNTRY seems to be a word with different definitions depending on context. See most other posts in this thread for examples and reasons.
When it comes down to it, Scotland is called a country, by whatever definition. The UN definition is purely political.
Ergo, OP is neither right nor wrong, nor is his friend. Just go by what everyone calls it.
