I've been playing Morrowind and Skyrim (can't get into Oblivion again as it feels inferior to both Skyrim and Morrowind) off and on and honestly I'm bored of both.
With Skyrim I can roleplay, and become immersed in the game. I spend more time outside of cities/towns exploring and just finding cool, and interesting people. In Skyrim I can truly enjoy leveling as I never feel like I just took advantage of the game in order to gain an extra level. The combat, and the leveling feel much more rewarding and satisfying to me. There are also far fewer things that annoy me in Skyrim than Morrowind.
With Morrowind I can enjoy the towns, the people, the culture, and the politics much more. I absolutely hate the art style, as it feels too barren, destroyed, and alien to me. However that's just a preference, it works very well at communicating the type of land the Dunmer live in. I enjoy the different factions, and the fact that I can pretty much solve quests in different ways.
What I hate about Skyrim is that I feel somewhat shackled. Once I'm given this level of freedom I feel like there should be more avenues I can pursue. I'd love to solve quests in a different way, or maybe be somewhat political. Heck I would have loved for me to be a politician who completed the Civil War through allowing both sides to come to a true agreement. However that isn't the case.
What I hate about Morrowind is that the game is incredibly easy to manipulate. I've ended up with an absurd amount of money, spells that allow me to cheese through levels, and so on. It's far to easy to game once you understand the system, and after you understand the system the game doesn't provide much more. I don't like exploring Vvanderfell as much as Skyrim, and it doesn't svck me in as much. The things like levitation, acrobatics, and athletics really leave a sour taste in my mouth as they totally break any feeling of "realism" the game provides.
After playing both games I'd argue neither is deep. I've been kind of raised playing competitive games and that honestly spoils any sense of depth single player games have for me. There is no metagame, or changing tactics. Once you understand the system you become the ruler of the game because AI, and programming are, and will never be on the same level as the brain.
