Anyway it depends on what you are looking for IMO. Good of the overall world? Good of the overall Empire? Good of Skyrim? Good of any city in Skyrim? Good of any particular individual in Skyrim? Good for your PC? The answers to these questions between picking the Empire or Stormcloaks is often different.

I played characters that supported the Empire and wouldn't have it any other way. I've also played characters that wanted only to support the Stormcloaks. Most of my characters however, just didn't care.

The empire were weak when they agreed to the piece treaty and should be punished for it IMO

I see it has a land where having either side winning won't help. I tend to choose the Stormcloaks on the pure basis that the Empire is associated with the Thalmor.

Empire lost a war not even 30 years ago and are just a figment of what they were so it was either to sign the treaty or die and thalmor would still go on either way. At least the empire can rebuild but that is not happening when one racist man just as racist as the thalmor is trying to wipe them out when the real enemy is the thalmor.

You guys do realize that High King Torygg was already contemplating rebelling against the Empire before Ulfric killed him? If you talk to the people of his court and Elisif, you'll find out that he was against the Empire. The Court Mage even says that High King Torygg likely would've backed up Ulfric against the Empire if only Ulfric had asked.
The Empire isn't going to win the war against the Thalmor. The Empire already lost the Second Great War before it's even begun, the very moment that they signed the White Gold Concordant. They allowed the Thalmor in to infect them, and now the Thalmor have spies everywhere in the Empire, because the Empire allowed them too. The Thalmor will know where/when/how the Empire is going to strike, even before the Empire itself knows.

I was hoping you could go beyond the White Gold Concordat. It does matter if they disapprove of it in secret, because those are their true beliefs. Unfortunately, because it is stamped on the paper for others it looks like it is their official position. That is why the Stormcloaks fail. They don't see the bigger picture!
