- Mark + recall, divine intervention, chameleon, plus a lot more spells that are gone now,
- Factions and quest-lines, Skyrim has relatively few joinable factions.
- Skills (skill sets in the skill tree) are much to generic. For example: throwing long blades, axes, daggers, etc into one skill tree detracts from character building imho.
- Plenty weapon types that are gone, or have just been thrown into a generic skill tree.
- Attributes, etc.
- Effect of player actions on the game world. Even the dragons stay when you finish the main quest.
- Equipment slots.
- Effect of reputation and disposition.
- NPC's have very little to say about the game world, themselves, their interests, their concerns, rumors, etc. Most NPC's are just world-fillers, decoration.
- Quite a bit more.
I like Skyrim though, Skyrim has it's own qualities. And many of my issues with the game are fixed by mods anyhow. I like it more then I liked Oblivion, but less then I liked Morrowind.
