I want to take the fight to the Thalmor. They're fairly interesting villains, but so far Skyrim doesn't really DO anything with them.

Well, I would love anything that you have thought. Lore wise, fasinating, well thought. But I don't think Betheseda think that way, they will just add something they see last day in Tv/cinema, at least that is partwise my expression of Dawnguard.
Thanks for your kind words. I disagree, though. Maybe they don't think this way, but they have proved they could make really original, interesting, big expansions. Tribunal, Bloodmoon, Shivering Isles : none of those were some random stuff seen on television and implemented in-game. I am pretty confident that they'll bring us something big, something well thought and fascinating (to quote your qualifiers).
I would like to see future DLC to involve some, if not all of the following...
Magic - The Skyrim magic system is excellent, I love the fact there are different types of projectiles, and the runes add a special little something. So what do I want to see in a DLC? Expanded content.
- More spells - A return of the spells they discarded (Feather, Open Lock, Water Breathing), why discard them?
- Levelled destruction magic - I don't need to go into detail with this one, it's a simple request.
- College of Winterhold - This guild was quite frankly pathetic, I want to see a DLC focused on some content for mages.
Items - A small DLC similar to Fallout: New Vegas' Gun Runner's Arsenal. Just add items, more robes for mages, more sets of armour, more crossbows, a return of short swords, some decent helmets, maybe even spears? There doesn't need to be quests content for this DLC, just add items so our Dragonborn can be unique.
Race Specific Quests - This may seem like a strange request, but I think something should be added that will change the game for each race.
- High Elf - The Thalmor contact you, an early opportunity to join the Thalmor and gain access to a whole different side of the war.
- Redguard - When you meet the Alik'r for the first time, you have an opportunity to join them and open up a new guild.
These are examples of what I am suggesting, the other races will offer similar bonus quests, the Nords will have an expanded Stormcloak questline and the Imperials will have an expanded Imperial Legion questline.
I just feel like Skyrim isn't noticing the fact that I'm an outsider, yes you get the odd comment, but nothing other than that.
Nice ideas. In your "Items DLC", I hope you envision horse armors !

Well, as with the Thalmor, I would prefer to save them for a future full-fledged game, happening somewhere in the Aldmeri Dominion. I think the Psijic Order and Artaeum deserve more than a DLC : they deserve to be entwined in an intricate way to a larger plot and political setting.
Moreover, the Psijic Order follows the Old Ways of Tamriel, which relate them to Centaurs. So I would like to see them appear if the Psijic become a main focus. I find that Centaurs, alongside Dreughs, are one of the most fascinating races of Tamriel, and one about which not much has been disclosed yet.
Skyrim's engine is impressive, but not impressive enough to handle Centaurs properly in my opinion, seeing how I find mounted combad rigid, uneasy and unnatural. I think the Centaurs would deserve some more wait to make them properly.
Something involving giants. They're sentient species, since they have tools, clothing, painting, fire, and other indicators, but they don't talk. All they do is herd mammoths and send people into space. There's potential there to develop giants into more fleshed out beings.
Yes, definitely. From the day they released the first screen involving mammoth, with those engraved tusks, I have expected much more from them. They disappointed me. I want to know the meaning of these engravings, the meaning of the painting on sacrificial cows, their links with cairns and the Moons, I want to see the tusk engravings performed during some ceremony involving Giant Shamans. Well, maybe I don't want anything of this list specifically, but I definitely want a more fleshed-out lore, about their society, customs, beliefs, arts and crafts, history, and so on. Giant questgivers would be nice as well.
And this holds for Frost Giants too.
