I found a solution for myself:
I downloaded the 1.1 files from the links other people have provided. I won't repost them as I'm not sure of the rules regarding posting those files on here.
To be safe, I backed up the 1.2 files for now.
I put the 1.1 .exe, .bsa, and .esm files in the proper locations.
I disabled auto-updating in steam.
I ran the game using the 4gb Skyrim.exe I have, that enables Skyrim to recognize 4gb of memory.
Game was back to being unpatched.
Checked steam's settings upon quitting (using the console command, qqq, as I always do, since it's faster) -- still set to "do not update"
We'll see if it auto downloads again. If it does, I can just replace the files again, but this worked for me, I can play again with resistances and working bookshelves until a hotfix comes out.
